CAMP FIRE PAELLA

We made the most delicious Paella on the campfire the other night , it was easy peezy!
You will need chicken, chorizo sausage, mussels, prawns, lemon, carrots, peppers, onion, garlic, parsley, celery, frozen peas, diced tomatoes, white wine, chicken stock, and SAFFRON.
Chop up all your veggies...keep em chunky, THINK LIKE A GYPSY be free!
You will need a big cast iron skillet or an old wok. (something you don't care too much about)
Cook up all your meat till it is nice and brown and about 80% done. Don't forget lots of olive oil.

Remove the meat, pour yourself some white wine, saute your prawns, make a toast to BACCHUS and throw some of your wine on the prawns!
Remove the prawns and throw in all your veg, lot's of garlic and onion! Drink some more wine!
Pour in your chicken stock and bring to a boil. Take your time and enjoy the smells and colour!
Have faith it will work, in fact it is hard to screw up!
I suggest a flashlight!
Pour in 2 cups of white rice and a pinch of saffron and let it boil! Put your pre-cooked meat back in the pan and let her cook for a good 10 min or so.
Add ground pepper and salt.
Throw the prawns back in and toss in the uncooked mussels.
Let it boil till the mussels open, stir often as not to burn the bottom.
Remove from the heat add some parsley and let sit for 5 min.

Then Enjoy!!!!
